Desert - Rhubarb Crumble
4 cups of diced rhubarb (or other fruit apple, peach, plums)
1 cup of flower
3/4 cup regular rolled oats (not instant)
1 cup brown sugar, packed (for apples, peaches use less sugar)
1 tsp. salt
1 tsp. cinnamon
1/2 cup melted butter or margarine (1/4 lb.)
Mix five ingredients with butter and press half of it firmly
into a buttered 9" sq. baking pan (or pie plate). spread
fruit evenly over crumbs.
1 cup reg. sugar
1 Tbs. cornstarch
1 Tsp. Vanilla extract
Mix these 3 ingredients with 1 cup of water in sauce pan
& stir over moderate heat until thick & clear. Pour
evenly over fruit.
Sprinkle remaining crumbs over top & bake in 350 deg f
oven for 1h or until golden brown. Cover with foil (for
moisture) for baking. Serve warm or cold with ice cream.
