Focaccia (two 10" Focaccia's or one pizza dough)


1 package (2 1/4 teaspoons) active dry yeast
1 1/3 cups warm water

Combine and let sit for 5 minutes

Add:
3 1/2 to 3 3/4 cups of all purpose flour
2 tablespoons olive oil
1 table spoon salt 
1 table spoon sugar (optional)

Knead for 10 minutes lightly coat with oil and place in a bowl 
and cover.  Place it in a warm spot for 1 1/2 hours or until
double in size (I use the top of the refrigerator the heat from
the back works well or in front of a vent register).

For Pizza the rest is up to you.

For Focaccia follow onward:
Preheat oven for 400F.  Grease a pan and dust with Corn
meal.  Cut dough in two flatten in to two rounds 3/4" thick.
Place on pan and drizzle with olive oil and sprinkle with
oregano, olives, pesto, sun dried Tomatoes or nothing.
Then with Parmesan Cheese.  Cook for 20-25 min.  To
Serve cut into strips with dip sauce.

Dipping sauce 1:
Hot tomato sauce with Oregano

Dipping sauce 2:   
In a small Saucer fill half of it with olive oil and the
other with Basmatic Vinegar (For Tiane, aged Basmatic
vinegar :) .
